Raw

Every second Saturday I find myself sitting in a booth at our local Farmer’s Market with two teenagers, selling the organic veggies we grow in the gardening program I run at work.

It’s fantastic people watching, a great chance to stock up on fresh local fruits and veggies for the week and when it’s nice out, it’s a pretty sweet way to spend a work day.

A few weekends ago they had a raw food chef giving a cooking demonstration (well sort of -because she’s a raw chef of course there was no actual “cooking” being done – none! Totally up my alley!) 

She made a raw spaghetti out of zucchini noodles and a simple marinara sauce, it took about ten minutes and I was quite intrigued by the whole thing (Yes, mostly because all of the non-cooking) so I lined up for a sample after the demonstration was finished.

Guys, this dish knocked my socks off. It wasn’t just good for raw food, it was good period. I made it all by myself a week later and served it to Adam and his dad. Both of them are staunch meat eaters and hearty man-types and they agreed that it was awesome and even went back for second and third helpings.

Don’t be put off by how your “noodles” might look like a compost bucket – it’ll taste good, I promise!


                                                   Raw Zucchini Spaghetti

First get yourself 4 medium sized zucchinis. Wash them thoroughly.

If you have a mandolin, use that to make the noodles. I have no idea what that is (a musical instrument?), so I just used a vegetable peeler to make fettuccine-style noodles and it worked great.

(Seriously, not compost)

Next blend together the following ingredients until smooth:

1 ripe tomato, chopped
½ cup sun-dried tomatoes
½ red bell pepper, chopped
2 tablespoons extra-virgin olive oil
1 tablespoon minced fresh basil
1 teaspoon dried oregano
1 clove crushed garlic
1/2 teaspoon sea salt
Dash black pepper
Dash cayenne


(I didn’t take any pictures of this step because I forgot. But look! TV magic! The finished product!)

EHRMAGERD! Raw spaghetti why you look so tasty?

Look at that, a garnish and everything! Seriously just try this, it’s so perfect for hot summer weather when you don’t want to cook, and/or when you are trying to pretend you are some sort of adventurous foodie when really you’re a poser who just loves the idea of not having to dirty pots and pans.

      Oh I’m so glad! I’m kind of in shock that I’m getting complimented about a recipe, a FOOD recipe! Your blog is fabulous, I’m going to read more and see if I can learn how to make more than my five staple dishes 🙂
